Dried porcini mushrooms
Eekhoorntjesbrood is the Dutch name for Boletus edulis, known in Italy as porcino. In Italy, four related species may be sold under the name funghi porcini: Boletus edulis, Boletus pinicola, Boletus aereus, and Boletus reticulatus.
What you will read on the packaging
- The species with its Latin name. Porcini is a group name for four related species.
- The commercial grade. French producers may use their own designations, such as Extra or Surchoix.
- The origin.
- The packaging date.
The four commercial grades
Dried porcini mushrooms packaged in Italy are assigned one of four commercial grades: Extra, Speciale, Commerciale, or Briciole. Italian law specifies for each package what portion of the pieces may be defective, for example due to discoloration or damage; this limit varies by grade.
