Harvest calendar: when each truffle is harvested

Every truffle variety has its own season. In Italy, the truffle law determines when they may be harvested: white truffle from October 1st to December 31st, black winter truffle from November 15th to March 15th, and summer truffle from May 1st to November 30th.
The seasons

Italian regions may adjust these dates. In Italy, fresh truffle may only be sold within the season of the specific variety.
What the harvest month tells you
In a jar or sauce, you can no longer see the truffle itself. The harvest month then indicates which season it comes from. This is different from the production date, which tells you when the jar was filled.
For summer and autumn truffles, the month is the most important piece of information. They are genetically the same species, but the law describes the aroma of the autumn harvest as pleasant and that of the summer harvest as light.
