Summer truffle and autumn truffle (Tuber aestivum)
According to genetic research, the summer truffle and autumn truffle are the same species, Tuber aestivum. Italian law, however, distinguishes between them: the summer truffle is harvested from May 1st to November 30th and has a mild scent, while the autumn truffle (Tuber uncinatum) is harvested from October 1st to December 31st and has a pleasant scent.
One species, two seasons
Research on truffles from across Italy and other European countries found no genetic difference between the two. Researchers believe the difference in scent is related more to the environment in which the truffle grows. Internationally, the species is also known as the Burgundy truffle.

The harvest month tells you which one it is
Labels sometimes state only Tuber aestivum, even for an autumn harvest. The harvest month makes the difference clear: a truffle from June is a summer truffle, a truffle from December is an autumn truffle. The seasons overlap in October and November.
How to read the label
