White truffle (Tuber magnatum)
The white truffle is Tuber magnatum, known in Italy as tartufo bianco. According to Italian truffle law, it is harvested from October 1st to December 31st and has a smooth, light yellow to greenish skin and a strong, pleasant aroma.
From the wild
White truffles grow in natural forests. It was not until 2019 that white truffles were harvested in a planted orchard for the first time, in France. A white truffle is therefore a harvest from a forest, from a single autumn. The harvest month indicates which one.
Names such as tartufo bianco d'Alba refer to the same species; they point to the area where it was gathered.
White truffle and bianchetto
Tuber borchii, known in Italy as bianchetto, is also light-colored and smooth. It is harvested from January to April and has a scent that leans towards garlic. At first glance, it is difficult to distinguish white truffles from each other; the Latin name on the label provides certainty.

Look for the Latin name Tuber magnatum, the percentage of white truffle, and the aroma designation in the list of ingredients. You can read what that designation means in the aroma ladder.
