Dried chanterelles, small — 25 g

Dried wild morels of the species Morchella conica, small size: smaller than 2 cm. The producer dries them on a rack over a wood fire, which gives them a slightly smoky note alongside their nutty, woody flavour.

Soak them for half an hour in lukewarm water and then rinse them thoroughly. Morels should always be cooked and never eaten raw. They go well in a cream sauce with chicken or veal and make a festive risotto.

When soaked, they weigh approximately 3.5 times as much: 10 grams of dried morels yields about 35 grams. Read more in storing and using truffles and dried mushrooms.
